Jalapeno popper chicken…you are AMAZING!

Tonight’s menu was Jalapeno Popper Chicken and it was so good.  Like almost dirty.

Jalapeno Popper Chicken

In prepping this chicken, it called for panko bread crumbs.  This was my first foray with panko and I think I may have been living under a rock.  I just love how crispy they get.  However, in my case I was fooled at the grocery story by the fine print of ‘italian’ crumbs.  When I opened them up and smelled parmesan cheese, I was pretty cheesed off.  (pun intended)  I was pretty sure this would mess up the whole thing but after I added some garlic and cumin to the crumbs it was no biggie.

The stuffing of the chicken was also very easy.  I wish my chicken breasts had bigger pockets though.  I would have loved more cream cheese and cheddar cheese goodness.

I wasn’t sure what I was going to use for baking them because I don’t have a small roasting rack.  I improvised with the rack from the inside of my convection cooker on a cookie sheet. I baked the chicken for 45 minutes because I have a fear of giving myself and my husband food poisoning.  When it was done, it was like a magical crispy breast of wonderful.

This recipe gets 2 thumbs up and will be on regular rotation in my dinner line-up.

P.S.- It really does turn out a lovely looking as the picture.
